If a packed lunch is all you want due to time constraints then this is it.  Most clients like my pastrami on marble rye with spicy yellow mustard or a the cracked pepper crusted turkey sandwich.  You can top each sandwich with lettuce, tomatoes, sprouts, onions, mayo, mustard and cheese.  Just give me a call and I will try my best to accommodate your request for other choices.  I always shop local and can purchase high quality produce at multiple farmers markets.  Drinks and Snacks too!    

This gourmet lunch will be sure to wet your appetite!  We will start off by setting out a trolling spread for some muskies just in case one gets hungry like us.  Hope you are up to taking over control of the boat as I get everything ready.   I will prepare a cold tenderloin steak sandwich with lettuce, tomatoes and a fresh whipped horseradish sauce on Panera’s ciabatta bread.  Be sure to enjoy the local organic fruits I have aboard too.  There will also be 2 personal bags of Kettle’s Organic Potato Chips of your choice.  A 4 pack of Jones Organic Peach Tea will help keep you hydrated and complements the lunch on every level. 

Can you smell the fresh walleye starting to cook over the fire?  Lunch will take over 45 minutes to prepare, but it is well worth it just for the experience alone.  For those who have never had a shore lunch prepared lake side should ask about this unique and custom adventure.  I prepare my shore lunch in a very classic style with you in mind.  Within minutes of having the fire going, you will be eating beer battered walleye out of a cast iron skillet with fresh lemon and a dipping sauce.  While that is preparing I will be getting the second course ready.  That’s right… round 2!  This walleye is steamed over a bed of red potatoes and white onion.   Organic unsalted butter helps cook the local Southern Illinois potatoes just right.  Wash it all down with a cold IBC root beer and you are set!   This foil packet is to die for and I get multiple requests to prepare this dish on trips to Canada and Minnesota each year. 

If you really want top shelf I can do homemade onion rings with a fresh whipped horseradish sauce to compliment the shore lunch experience.  There will also be a cold bottle of Seyval Blanc from Owl Creek Vineyard.  This local Southern Illinois Winery in Cobden produces some of the best wine within the Shawnee Hills American Viticulture Area.  This one might take an hour…
